What Is a Steam Table?

How to hold rice, pasta, sauces and soups hot during service without cooking them to death.

Quick Answer

A steam table is food-holding equipment that keeps already-cooked hot food hot during service, using hot water and steam under the pans. It holds food. It does not cook or reheat it. Load it with food that is already cooked and hot, keep lids on, stir, and swap whole pans.

Key Takeaways

It holds, it does not cook

Rice, pasta, sauces and soups go in already cooked and already hot.

Steam is gentle heat

Hot water and steam heat the pans more evenly than dry heat, like a bain-marie.

Lids on, stir often

Lids stop sauces and grains drying out. Stirring stops scorched edges.

Probe through service

Stay at or above the hot-holding temperature in your local health code.

Swap, never top up

Hold smaller pans of soup, rice or pasta and swap in a fresh full pan.

Mind the water

Keep wells topped up with hot water and never pour water into a dry-heated well.

The Basics

What a steam table is

A steam table keeps already-cooked hot food hot during service in kitchens, buffets, cafeterias, hotels and catering lines. It has two or more wells. Each well holds a full-size steam table (hotel) pan, or smaller fractional pans set on adapter bars. You will find the units under Appliances, and the hotel pans, lids and adapter bars under Cookware & Bakeware.

Heat moves from an electric element or gas burner, through hot water and steam, into the pans. Steam is gentler and more even than dry heat. It works the same way as a bain-marie.

The Problem

How food gets "cooked to death"

Too much heat for too long keeps cooking the food. Rice goes mushy, vegetables turn grey and soft, cream sauces break or scorch, and the edges crust over. If the well runs low on water, the pan bottom scorches. Leaving the lids off dries everything out.

The opposite problem is just as bad. Food that went in too cool, or that someone tried to "reheat" in the well, sits too cool for too long. That is a food safety problem. And topping up an old pan with fresh food risks contamination. Either way, you end up with waste, tired food on the line, and money in the bin.

Field tip: A steam table is not a cooker, not a reheater, and not a place to hold food forever.
Method

How to hold hot food properly

  1. Cook or reheat first on the stove, in the oven or in a combi. Food goes in already hot.
  2. Preheat the steam table with hot water.
  3. Keep lids on whenever you are not serving.
  4. Stir regularly so sauces, rice and pasta heat evenly.
  5. Probe through service and stay at or above the hot-holding temperature in your local health code. In Alberta, that is the Food Retail and Foodservices Code.
  6. Hold smaller pans and swap in fresh full pans. Never top up an old pan.
  7. Do not overfill or stack pans. Use the right lids, adapter bars and fractional pans.

FAQ

Frequently asked questions

What is a steam table?

A steam table is food-holding equipment that keeps already-cooked hot food hot during service. It has two or more wells, and each holds a full-size steam table (hotel) pan or smaller fractional pans on adapter bars. You see them in kitchens, buffets, cafeterias, hotels and catering lines.

How does a steam table work?

Heat moves from an electric element or gas burner through hot water and steam into the pans. Steam heat is gentler and more even than dry heat. It is the same idea as a bain-marie.

Can you cook or reheat food in a steam table?

No. A steam table holds food. It does not cook and it does not reheat. Food should go in already cooked and already hot. Reheat on the stove, in the oven or in a combi first.

What does "cooking it to death" mean on a steam table?

Too much heat for too long keeps cooking the food. Rice turns mushy, vegetables go grey and soft, sauces break or scorch, and edges crust over. The result is waste and tired food on the line.

What is the difference between a wet and a dry steam table?

Sealed wells take water straight in and drain it out. Open wells use a spillage pan of hot water for moist heat, and some can run dry for crisp items. Dry heat is harsher, so the food needs more watching and stirring. Run yours the way the maker's manual says.

Can I add water to a steam table well that has been running dry?

No. Never pour water into a well that has been heated dry, because it can crack. Use hot water, keep the level topped up, and follow the maker's manual.

How do you calculate shipping on bulk orders?

We calculate shipping on live carrier rates at checkout, not on flat or subsidized tiers. Every order is priced against real LTL, parcel, or pallet-freight quotes from our Calgary warehouse to your dock. That means you never absorb hidden shipping costs into product margins. What we charge is what the carrier charges us, plus a small handling pass-through. For bulk and pallet orders this typically runs 15–25% lower than competitors who bake shipping into their unit prices, because the rate is transparent and tied to the actual shipment weight and distance.
