Cooking Instructions:

  1. Soak 1 ½ cups of Seven Bean Soup Mix in 4 cups of water overnight in the refrigerator. Drain the water.
  2. Simmer the beans (enough to cover) until tender, then drain and reserve the liquid.
  3. In a separate pot, cook 1 ham hock in 2 quarts of water until the meat falls off the bone. Dice the meat and reserve the broth.
  4. Combine the reserved broth with the liquid from the beans (adding water to make 2 quarts), and cook diced vegetables (2 cups celery, 2 cups carrots, and 1 medium diced onion) until tender.
  5. Beat 1 large egg, placing ¾ cup flour in a bowl. Pour the egg into the middle and use a fork to mix it into crumbs. Sprinkle these crumbs into the boiling broth, cover, and simmer for 10 minutes.
  6. Finally, add the ham and beans, and serve!
