What is the Slush Puppie syrup-to-water ratio, and how many slushes does a 4 L bottle make?

Slush Puppie syrup is a 5 to 1 concentrate: 5 parts water to 1 part syrup, or 835 mL water plus 165 mL syrup per litre of mix. One 4 L bottle makes 24 L of slush, which is about 67 servings of 12 oz (355 mL) or 50 servings of 16 oz. A case of four bottles yields 96 L, or roughly 270 twelve-ounce cups. The same ratio applies to all Slush Puppie flavours and to the neutral base used with flavour shots.

Why is my slush too hard or too watery?

Slush texture depends on sugar content, measured in degrees Brix. The target for a granita or slush machine is 13 to 15 Brix; below about 12 the mix freezes solid on the barrel and the auger strains, and above 16 the mix stays liquid and will not freeze. If the slush is too hard, add water; if it is too watery, add syrup. Diet or sugar-free syrups need a special low-sugar machine setting. Check the ratio with a refractometer or by measuring exactly, since pouring by eye is the most common cause of freezing problems.

Keep the hopper at least one third full during service to maintain texture, and clean the barrel and auger at least weekly.

How should Slush Puppie syrup be stored, and how long does it last?

Unopened Slush Puppie syrup keeps 12 to 18 months in a cool, dry stockroom away from sunlight. Once opened, cap the bottle tightly and use it within 7 days at room temperature, or refrigerate it to extend that to about 30 days. Mixed slush in the machine should be used within 5 to 7 days and the machine drained and sanitized between batches. Never freeze the concentrate. Write the opening date on each bottle and rotate stock first in, first out.
