• Mix • Water • Frozen corn or canned drained niblets (optional) • Using a 4 speed upright mixer with a paddle attachment: • Mix for 1 minute on 2nd speed. • Scrape the bowl. • Mix for 1 minute on 2nd speed or until batter is smooth. Add the corn and mix on 1st speed for 20 seconds. • Allow batter to sit for 30 minutes before depositing into desired size muffin or small bread pans. • If desired, top with cornmeal, coarse or regular granulated sugar • Bake / Cuisson : 162°C (325°F) in convection oven / dans un four à convection. • Bake / Cuisson : 190°C (375°F) in a conventional oven / dans un four conventionnel. • Bake / Cuisson : 176°C (350°F) in a rack oven / dans un four à paniers. • Batter temperature / Température de la pate :21°C (70°F).
