Unopened portion packs of ketchup, mustard, relish, soy sauce, hot sauce, jam and honey are shelf-stable and can be stored at room temperature until the best-before date. Commercial mayonnaise and dressing packets are also shelf-stable while sealed, because they are made with pasteurized eggs and enough acid to stay safe. Bulk jars and jugs of mayonnaise and creamy dressings must be refrigerated once opened. Store all packets below 25 °C and away from heat, which can split seams.
Opened ketchup keeps about 6 months refrigerated, mustard about 12 months, mayonnaise about 2 months, relish about 6 to 9 months and jam about 6 months refrigerated. Soy sauce keeps about a year after opening and longer in the refrigerator. Hot sauces high in vinegar keep 6 months or more. Label each container with the opening date, keep pumps and nozzles clean, and never top up an old container with new product.
Regular soy sauce is not gluten-free, because it is brewed from soybeans and wheat. Tamari is the traditional Japanese style made with little or no wheat, and products labelled gluten-free, such as Kikkoman Gluten-Free Tamari and Lee Kum Kee Gluten-Free Soy Sauce, are made without wheat. Restaurants serving guests with celiac disease should use a labelled gluten-free soy sauce in separate dispensers and packets.
Dispensers and pouches cost less per serving because the condiment is bought in bulk, and they create less packaging waste. Portion packs cost more per serving but control how much each customer takes, stay sealed and sanitary, and are the only practical option for takeout and delivery. Many restaurants use pumps or squeeze bottles for dine-in and keep 500- or 1,000-count cases of packets for takeout orders. A standard ketchup packet holds about 8 to 9 mL.
The Scoville scale measures chili heat in Scoville Heat Units (SHU). Frank’s RedHot is mild at about 450 SHU. Huy Fong Sriracha sits around 1,000 to 2,500 SHU. Tabasco Original Red is about 2,500 to 5,000 SHU. Habanero-based sauces typically run much higher. For a menu, offer one mild and one hot option, and keep the hottest sauce as a table condiment rather than cooked into dishes, so guests control the heat.
