Silicone vs metal for cupcakes?
"Silicone vs metal for cupcakes?"
Same batter, split between the two pans, and you can see the difference the second they come out of the oven. It comes down to how each pan handles heat.
Metal conducts heat fast. The edges of the cupcake set quickly, so the batter in the middle has nowhere to go but up, and it domes.
Silicone insulates instead, so it heats much slower. The batter spreads a bit before it sets, and the cupcakes come out flatter on top.
That is the whole difference. One batter, two pans, two very different tops, and it is just heat doing it.
