A standard serving of salad dressing is 30 mL (2 tablespoons) for a side salad and 45 to 60 mL for an entree salad. A 3.78 L jug therefore gives about 125 side servings or 60 to 80 entree servings. Portion cups are sized to match: 45 mL cups for entree salads and 18 to 30 mL cups for sides. Dressing on the side, in a portion cup, lets guests control the amount and keeps takeout salads crisp.
Opened creamy dressings such as Caesar, ranch and blue cheese keep about 1 to 2 months refrigerated. Vinaigrettes keep about 2 to 3 months refrigerated, and longer for oil-and-vinegar styles. Unopened jugs and portion cups are shelf-stable until the best-before date. Restaurant practice is to decant from the jug into a clean squeeze bottle or bain-marie, label it with the date, and never mix old and new dressing.
Most commercial dressing portion cups are shelf-stable while sealed, because they are made with pasteurized ingredients and enough acid to stay safe at room temperature. Check the label, since some fresh-style dressings must be kept cold. Once the seal is opened, the dressing should be refrigerated or used. Store unopened cases below 25 °C and away from heat.
Caesar dressing is a creamy emulsion of oil, egg, garlic, lemon, parmesan and usually anchovy or Worcestershire sauce, made for romaine with croutons and parmesan. Creamy garlic is a simpler mayonnaise-style dressing built on garlic and herbs, without the cheese and anchovy notes. In Canada, creamy garlic is also used as a dip for pizza and wings. Guests who avoid fish should be told that most Caesar dressings contain anchovy or fish ingredients.
Dressing mixes such as Hidden Valley Original Ranch come as a dry seasoning that is blended with mayonnaise and buttermilk or milk on site. Large food service bags make many litres of dressing; Hidden Valley’s 20 lb mix is rated to make about 100 gallons. Mixing in-house lowers the cost per serving and lets kitchens adjust thickness for a dip or a pourable dressing. Made-up dressing must be refrigerated and used within the time on the label.
