Samyang lists its original Buldak ramen at about 4,400 Scoville Heat Units (SHU), and its 2x Spicy version at about 8,800 SHU. The Carbonara version is milder, at about 2,600 SHU, because it is balanced with a creamy sauce. For comparison, a jalapeno pepper is roughly 2,500 to 8,000 SHU. Buldak is a stir-fried noodle: the water is drained before the sauce is added.
Instant noodles are high in sodium, often 1,000 to 1,800 mg per package depending on the brand and size, most of it in the seasoning packet. Health Canada recommends most adults keep sodium to about 2,300 mg a day. Using half the seasoning packet roughly halves the sodium, and adding vegetables and an egg makes a more balanced meal. Check the nutrition facts on each product.
Instant noodles have a long shelf life, typically 6 to 12 months from production, because they are dried or fried and sealed. Check the best-before date on each case. Store them in a cool, dry place away from strong odours. Noodles past their best-before date are usually still safe if the package is intact, but the oil in fried noodles can go stale and affect flavour.
Cup and bowl noodles need only hot water and no dishes, so they suit self-serve break rooms, work camps, convenience stores and vending. Packs cost less per serving and give a better texture when cooked on a stovetop, so they suit kitchens that cook to order. Many camps stock cups for grab-and-go and packs for the kitchen. Provide a hot water dispenser for cups.
Noodles in microwave-safe bowls can be microwaved by following the package directions. Noodles in foam cups or bowls with foil lids must not go in the microwave; add boiling water instead. For packs, cook the noodles in a microwave-safe bowl covered with water, usually for 3 to 5 minutes depending on the oven wattage, then stir in the seasoning. Let the bowl stand a minute before handling, as it will be very hot.
