A serving of cereal is about 30 g for flaked cereals such as Corn Flakes and Special K, and 40 to 55 g for denser cereals and granola. A 700 g to 1 kg bulk dispenser pouch therefore holds about 20 to 30 servings, so one pouch covers roughly 20 to 30 breakfast guests for that cereal. Single-serve cereal bowls and cups hold one serving each, typically 27 to 51 g.
Bulk cereal in gravity dispensers costs much less per serving and creates less packaging waste, so most hotels use it for their main cereals. Single-serve bowls and cups cost more but stay sealed, suit grab-and-go breakfasts and are easier for allergen control. Many hotels use dispensers for two or three popular cereals and keep a basket of single-serve cups for gluten-free or specialty options. Clean and dry dispensers fully between refills so crumbs do not go stale.
Sealed cereal keeps until the best-before date, usually 6 to 12 months from production. Once a pouch or box is opened, cereal stays crisp for about 2 to 4 weeks if the bag is closed tightly or the cereal is kept in a sealed dispenser. Granola and cereals with nuts or dried fruit go stale or rancid faster. Store cereal in a cool, dry room and never top up a dispenser with new cereal on top of old.
Complete pancake mixes need only water. As a guide, 1 kg of complete mix makes about 25 to 30 pancakes of 10 cm (4 in), so a 20 kg food service bag makes roughly 500 to 600 pancakes. Use about 60 mL (1/4 cup) of batter per pancake. Let the batter rest 5 minutes before cooking, cook at about 190 °C (375 °F), and flip when bubbles form on top and the edges look set.
Shelf-stable milk, such as Milk 2 Go, is milk that has been ultra-heat treated (UHT) and sealed in sterile packaging, so it does not need refrigeration until it is opened. Unopened, it keeps for several months at room temperature; check the best-before date. Once opened, refrigerate it and use it within a few days, like fresh milk. Single-serve 200 mL bottles suit school lunches, camps and grab-and-go breakfast.
